Spicy Sausage & Brown Rice


I know I know you're probably like okay how many AMAZING dishes can this girl actually have (eye roll)....I make about 4-5 new recipes a week and I'm super picky about the ones that I actually share. They have to pass the "Troy" test and be worth making again.

This recipe did not disappoint! My mother-in-law shared this one with me. I made a few modifications and it was gone like that! 

Ingredients:
- 3 cups chicken broth
- 2 cups uncooked brown rice
- 1 tbsp olive oil 
- 1.5 lbs breakfast sausage 
- 3 cups diced onions (3 medium) 
- 3 garlic cloves, minced 
- 2 10oz cans Rotel (original)
- 1/2 cup heavy whipping cream
- 1 tsp salt
- 1 tsp pepper
- 2 cups shredded monterey jack cheese
- 2/3 cup thinly sliced green onions (2 bunches with ends removed)

Directions:
- Add chicken broth and rice to rice cooker, cook.
- Heat olive oil over medium-high heat in pan.
- Add sausage and onions and cook until lightly browned, stirring regularly.
- Add the garlic and cook for about 1 minute.
- Add the Rotel, cream, salt and pepper and stir.
- When rice is cooked, add rice to pan.
- Bring to a boil, cover and reduce heat. Simmer for about 10 minutes.
- Remove from heat and stir in half the cheese.
- Top with the remaining cheese and sprinkle with green onions.

Paleo Banana Muffins


These were really easy and delicious. Troy said they are the best "healthy" muffins that I have made. Score! A good way to see if a recipe is worth trying again - see how fast were they consumed. This time the muffins were gone in 24 hours!
