Loaded Turkey Stuffed-Twice Baked Sweet Potatoes

Isn't it amazing how people have such different palates?  Troy and I both really enjoyed this recipe, although we both had slightly different takes on it. Troy thought it was sweet and I thought it was spicy. Give it a try and let me know what you think. Sweet or spicy?!

Spicy Sausage & Brown Rice


I know I know you're probably like okay how many AMAZING dishes can this girl actually have (eye roll)....I make about 4-5 new recipes a week and I'm super picky about the ones that I actually share. They have to pass the "Troy" test and be worth making again.

This recipe did not disappoint! My mother-in-law shared this one with me. I made a few modifications and it was gone like that! 

Ingredients:
- 3 cups chicken broth
- 2 cups uncooked brown rice
- 1 tbsp olive oil 
- 1.5 lbs breakfast sausage 
- 3 cups diced onions (3 medium) 
- 3 garlic cloves, minced 
- 2 10oz cans Rotel (original)
- 1/2 cup heavy whipping cream
- 1 tsp salt
- 1 tsp pepper
- 2 cups shredded monterey jack cheese
- 2/3 cup thinly sliced green onions (2 bunches with ends removed)

Directions:
- Add chicken broth and rice to rice cooker, cook.
- Heat olive oil over medium-high heat in pan.
- Add sausage and onions and cook until lightly browned, stirring regularly.
- Add the garlic and cook for about 1 minute.
- Add the Rotel, cream, salt and pepper and stir.
- When rice is cooked, add rice to pan.
- Bring to a boil, cover and reduce heat. Simmer for about 10 minutes.
- Remove from heat and stir in half the cheese.
- Top with the remaining cheese and sprinkle with green onions.

Paleo Banana Muffins


These were really easy and delicious. Troy said they are the best "healthy" muffins that I have made. Score! A good way to see if a recipe is worth trying again - see how fast were they consumed. This time the muffins were gone in 24 hours!

Eggplant Parmesan


This is one dish that I often avoid. I've tried it a couple other times and it was hardly considered edible. I thought I'd give it another chance since eggplant was only 88 cents this week! 

This recipe is a KEEPER! Bookmark it, pin it, save it now! Troy loved it and even gave it an 8.5/10 - that's pretty darn good in his book! 

It took a little longer to make than most of my dishes, but well worth the extra time.

My T25 Alpha & Beta Journey!


A couple of people have asked me about my final T25 results, so I thought I would share them with you….Post Baby #2 and 10 weeks later, I couldn’t be happier with my T25 results! I’m down 10 pounds and 5 inches, which is smaller than I was before Simon! YAY!  

Weight loss is great and all, but I gained so much more by doing T25. I gained CONFIDENCE and HOPE that maybe I could have my body back. After I had Simon (baby #2) via emergency C-section, I thought that I would forever be grabbing the loose fitting shirts to hide my belly. Recovering from a c-section was WAY harder than recovering from natural childbirth, at least for me. It seemed like it was taking forever to get back to where I wanted to be. Not to mention, the weight didn't just fall off this time...thank you, T25!

I achieved the above results by doing T25 Alpha and Beta and drinking Shakeology everyday. I LOVED T25, but probably the time commitment more than anything. 25 minutes was very manageable to squeeze into my busy day and around the kids. I prefer to workout in the morning, but I found myself doing many of my workouts during naptime as well because I couldn’t seem to get out of bed…I'm not sure if it was sleep deprivation or because it was still pitch black when my alarm would go off. Ha!
 
What I liked about T25:
  • Daily time commitment of 25 minutes!
  • I got weekends off - only 5 workouts each week!
  • Shaun T - enough said!
  • Losing 10 pounds!
  • Rhythmic feeling of the workouts. I kind of felt like I was dancing at times, which I loved!
  • I really liked mixing in weights during Beta.
What I didn’t like about T25:
  • Length of program, 10 weeks. I started getting antsy to begin a new program around the 8 week mark (but I stuck with it).
  • I wanted more upper body work.
  • Lack of breaks – I know it’s only 25 minutes, but I LOVE getting short water breaks!

Would I do T25 again? ABSOLUTELY! I lost ALL of my baby weight with it. Plus, I have gained confidence and been extremely encouraged by my results. Although I have achieved my goal weight, I still have other fitness goals that I’m striving toward. Next up - toning and tightening (especially my belly) and increasing my flexibility.  I have to get this body ready for our cruise next month. Well, more like I want to be comfortable in my body so I can rock a new swimsuit! Project cruise here I come!

My New Career - Stay at Home Mama!


    Today marks the first day of a new chapter in my life – I’m now officially a stay at home mama! This was one of the HARDEST decisions that I have ever had to make. I’ve been praying and seeking guidance about this for a long time now.                                                                
    I am extremely thankful for the opportunity to work at PCCS. I have met and worked with so many AMAZING people and children. As much as I love all of my co-workers and the kids that I worked with, it just wasn’t the same as being home with my babies.                                          
    Troy and I sat down just before the New Year to talk about our goals for our family in 2016. My heart kept telling me that I wanted to stay home, but I still had so many doubts and fears. The Lord is faithful and gave me many clear signs that made this difficult decision a lot easier. I’m holding His hand tight and following His lead as I embark on this new adventure.  

    If you would have asked me 5 years ago if I could ever see myself staying home, I would have thought you were crazy. I was extremely career focused. I worked full time until Nolan was about 10 months old. Then I changed positions so I could be ...closer to home and part-time. Now that Simon has come into this world, my desire to stay home with the boys has only become greater. It’s amazing how these children soften your heart and change your perspective on life.
