ACORN SQUASH CANDY
This really did taste like candy, so sweet! It was amazing when paired with Venison Tenderloin. Plus, it only has FOUR ingredients!

Ingredients
- 1 acorn squash, cut in half
- 5 strips of bacon, diced
- 2 tsp cinnamon
- pinch of salt

Instructions
- Preheat oven to 415 degrees.
- Place the acorn squash open sides down on a baking sheet.
- Bake for 20-25 minutes until soft.
- While squash is baking, cook bacon until cooked through. Place cooked bacon on paper towel to soak up excess fat. Place 2 tsp of bacon fat in medium bowl.
- Let acorn squash slightly cool and scoop out excess seeds. Then scoop out squash from try skin and place in the bowl with the bacon fat.
- Sprinkle in the cooked bacon, along with cinnamon and salt. Mix everything together.
- Enjoy!

TODDLER ICE CUBE TRAY BUFFET 


This isn't exactly a recipe but it was a HUGE hit in the Morris household. I pulled out an ice cube tray and put different food in each section. Nolan LOVED it!

I was amazed by the food that he ate and the food he didn't care for as much. It's a nice change of pace allowing Nolan to have more control over his meal.

ZOODLES AND MEAT SAUCE
Have you had ZOODLES (zucchini noodles) before? This turned out WAY better than I thought it would. Plus, the flavor was phenomenal!
 
Ingredients 
- 3 zucchini
- 1.5 pounds breakfast sausage
- 1 24oz jar of marinara (I chose vodka and garlic)
- 1/2 sweet onion, diced
- 2 bell peppers, diced
 
Directions
- Brown sausage in skillet
- Sauté vegetables
- Place marinara, sausage and veggies in pot and simmer on medium-low heat.
- Pass the vegetable peeler over side of the zucchini to make long flat ribbons. Stop when you reach the seeds. You don't want that part.
- Place zoodles on top of a papertowel and microwave for 2 minutes to get rid of the moisture.
- Dish up the zoodles and put sauce on top.
- Enjoy!

SPICED NUTS 


    These are seriously amazing and I always get asked for the recipe. These aren't clean but they are such a tasty treat this time of year. 

    Ingredients 
    - 2 tbsp ghee, melted
    - 1.5 tsp chili powder
    - 1/2 tsp paprika
    - 1/4 tsp cinnamon
    - 2.5 cups of nuts (almonds, pecans, cashews)
    - 2 tbsp brown sugar
    - 1 tsp salt

    Directions
    - Preheat oven to 300.
    - Heat ghee over medium-low heat, add chili powder, paprika and cinnamon, cook for about 15 seconds.
    - Place nuts in large bowl, pour oil over nuts and toss well to coat. Add brown sugar and salt, toss to coat.
    - Spread nuts on a baking sheet in a single layer and bake for about 20 minutes until they are lightly browned. Stir/move the nuts around halfway through.

    These are such a hit that I usually quadruple the recipe. Enjoy!

SAUSAGE BURRITO SKILLET 


This was a really quick and easy recipe. I threw it together in 30 minutes AND I only dirtied a pot and a pan!

Ingredients 
- 1.5 lbs sausage
- 3/4 sweet onion, diced
- 4 tbsp taco seasoning mix (I use the one from Costco)
- 2 cans black beans, drained
- 1 can sweet corn, drained
- 2 cans diced tomatoes
- 1 bell pepper, diced
- 1 jalapeño, diced
- 1.25 cups quinoa
- 1 cup shredded cheese

Directions
- Prepare quinoa in pot as directed on bag.
- Brown sausage in large skillet over medium high heat.
- Add onion and taco seasoning and cook for 2 minutes
- Stir in black beans, tomatoes, corn, green pepper and jalapeño. Bring to a boil.
- Cover, reduce heat and let simmer for 7-10 minutes.
- Stir quinoa and 1/2 cup cheese into sausage mixture.
- Sprinkle remaining cheese on top and serve.

BREAKFAST CASSEROLE 


This is a keeper for sure! Troy even told me not to lose the recipe. Plus, it's super easy and kid approved! 

2 tbsp coconut oil
2 sweet potatoes diced 
1/2 tsp sea salt 
2 lbs breakfast sausage 
1 onion diced 
2 cups chopped spinach 
12 eggs, whisked
1/2 tsp salt
1/2 tsp garlic powder
1/4 cup cheddar cheese
1/4 cup mozzarella cheese 

1.  Preheat oven to 400. Grease a 9x13 baking dish. 
2.  Toss fixed sweet potatoes in coconut oil and sprinkle with salt 
3.  Place sweet potatoes on baking sheet and bake for 20-25 minutes, until soft. 
4.  While sweet potatoes are cooking, place a large pan on medium heat. Add breakfast sausage and onion. Cook until meat is browned. 
5.  Place meat mixture in baking dish. Add sweet potatoes and spinach. Then add eggs, salt and garlic powder. Mix until well combined. 
6.  Place in oven and bake at 400 for 25-30 minutes until eggs are set in the middle.
